Yesterday I made a mud cake (using a very fine recipe given me by Martin the Terrible), and forgot to put any sugar in. Possibly this is where all the extra sugar that went into the banana cake came from. That's my explanation anyway. Nothing to do with the aging brain whatsoever....

The results are ... interesting. It tastes rather like 70% cocoa chocolate - that slightly bitter very cocoa-y flavour (not surprising really, given it has both cocoa and dark chocolate in it), but it has come out rather more dry than usual. I would have thought that removing a dry ingredient would make it moister. Go figure.

Yeah, I guessed it was something like that. Funnily enough I was just now reading that under the humural theory sugar was considered warm and moist.
