I like the Sumerians. But of course, I am referring to the recent hot weather. Hot weather means salads, and here's a nice one. I 'invented' it after having a similar, very good one at Brunelli's (you should try theirs if only for their dressing, which is so good), but also based on a 16th century Spanish recipe.
1 450gm tin of brown/green lentils
1/2 small red onion
1 clove garlic
2 tblsp parsley
8-10 'baby' bocconcini
2-3 baby beetroots

Slice the onion thinly and chop the garlic. Fry until soft in a tblsp of olive oil. Meanwhile drain and rinse the lentils and place in a bowl. Chop the parsley roughly and add to the lentils. Cut the baby bocconcini in half and add. Cut the beetroot into quarters or eighths (depending on size - you want pieces about the size of the halved cheeses). Add to the lentils. Add the onions and garlic and mix all together. Dress with your favourite vinaigrette style dressing.
